For flights, check sites like Southwest airlines or US Airways. Also do a search on kayak engine. It will check all airlines going to Vegas and all major travel sites and return the cheapest fare. http://www.lasvegas-how-to.com/cheap-flights.php
For hotels, book directly from the hotels using their discount promo codes to get the maximum discounts. Here are a few codes. http://www.lasvegas-how-to.com/special.php

Your best deal is going to be to shop the big places like
Expedia
Hotels.com
Kayak
etc. Those are “consolidators” … they buy up excess rooms then sell them.
Next you want to go to the website of the Hotels you are interested in and get their price.
Now you want to call a travel agent and don’t tell them what you know and see what they can do for you.
I’d book Southwest or Jetblue… cheap.
Plan on staying in the middle of the strip… NY NY, MGM, Luxor, Some place like that.
Go to Google Earth or Google Maps so you can get a birdseye view of where they are located.
As far as what to see I’ll let someone else cover that… lots of stuff.

The best thing about going to vegas is the Hotels – so on an afternoon go over and check a few out sometimes some hotels have free shows (i remember going to ceaser’s and there being on there) alternatively vegas is only 6 hours away from the canyon by car or over an hour with the helicopter so there is always that! In terms of finding hotels I would strongly suggest Gekko; http://www.gekko.com so have a quick hotel search and i’m sure you’ll find something to your liking because the great feature about this website is that it will only recommend hotels on the basis of your personality (hence all you have to do is answer 9 easy questions
In terms of flights – where are you flying from?! or alternatively there is always expedia, lastminute.com – are you familiar with those travel engines?
