We were also looking to go to Las Vegas around Christmas. IMO: The Orleans deal on Hotels.com is one of the best in the past 10 years***
http://www.hotels.com
Hotels.com has a special rate for the Orleans. Pay $ 32 for one night Sunday through Thursday get the next night free, it’s pay $ 49 for a Friday or Saturday night, get the next night free. You can stay as many nights as you like, we are staying 12 and paying for 6.
We booked from the 14th until the 26th, 12 nights, total cost $ 209.33($ 17.44 avg per night)
The Orleans has been ranked as high as the second best value hotel in the world by tripadvisor.com
The Orleans will price match this offer

Just call them and tell the operator you found the rate on Hotels.com
It took them less than a minute to check the rate, and match it.
Since the Orleans opened in 1996, we have stayed there every year.
***We go to LV 2-3 times a year for 2 weeks or more at a time and have for over 20 years. We always go out in December, to take advantage of the super low room rates, and of course we usually take advantage of as many comp nights as we need or want. The best deal that we had found in the past 10 years or so(before this one), that would be available to the general public was $ 15 per night at the Orleans, for 12 nights, with 4 four of those nights free. That same year we stayed at one of the hotels downtown, I believe it was the El Cortez, the first night was $ 9 the second night free, but it was only a 2 day deal.

Good economy or bad, Vegas is the one place where dealing with the hotel directly is always best. Plus, if you plan on gambling, this is the only way for them to be able to (partially) comp your room.
The week before and after Christmas (until about 12/28) is super cheap. Keep in mind this is for obvious reasons, but also because it’s fricking cold; 50s by day and freezing by night.
Depending on your budget, you can stay at the Imperial Palace for probably $ 30-40/night, with a great location. I think Bellagio and Venetian are under $ 150/night during the weekdays. With rates this cheap, stay away from off-strip properties (like the Orleans, Rio, or even the Palms) or those far away from the action, like the Sahara.

Book directly from the hotels using their discount promo codes. Here are a few codes for hotels on the Vegas strip.

Vegas is hurting at the minute and the hotels are showing this in their prices, you can stay at Excalibur from around $ 30 and you are right on the Strip there or 2 nights at Mandaay Bay for $ 99 on their employee deal that they have opened to the public ! There are so many good deals its a good time to go and try a hotel you would not otherwise want to spend the money on. http://vegasuncovered.wordpress.com/2008/11/06/crazy-end-of-year-rates-for-las-vegas-resorts-mgm-luxor-monte-carlo-mandalay-bay-excalibur-and-many-more/

Try to get a good hotel promotion in order to save some money. A great source regarding this subject is http://www.vegas-hotels-online.com

There are far too many hotels spread out all over the place to use a one of those hotel finders. The one Shatner advertises, Priceline, makes you lock in to the hotel before they tell you which hotel it is. Never book a Vegas hotel that way. You can end up much too far from the Strip or even in a bad neighborhood.
Stick to the Hotels on the Strip itself. Here is a link that provides PROMO Codes. Book at the hotel’s web site and paste the promo code in the discount box. You get the best deals this way. It is best if you do not have to rent a car. Staying at a Strip hotel places everything within walking distance or a quick ride on the monorail, bus or taxi.
There is a free tram that runs from the Excalibur to Mandalay Bay and on the way back it stops at the Luxor. That helps eliminate a lot of walking.
From the Airport to the hotel there are shuttles that cost $ 5 per person and you can also book your ride back to the airport. They are at kiosks outside the arrival exit at the airport.

Yes, I have seen good Las Vegas deals with the Shatner one as you said i.e. http://www.priceline.com on http://www.vegasdealsinfo.com . I think I saw a deal for $ 14/night from expedia.com on that site. They put the deals from the travel sites like travelocity, priceline, expedia etc.
I have had good experience booking through priceline in the past. Most of these travel sites usually have a Las Vegas webpage with the deals listed.
I also believe that if you buy flight+hotel together you can save money.

Usually it’s direct from the Hotel.
But how does one define “Best Deal”. Depends on where you want to stay and how you want to be treated.
One person can have a great experience at a Hotel while the next person has a miserable experience. And it’s not always just the money. Depends on the room you are in, the location of that room in the property, the neighbors… etc.
Want a nice room consistently cheap then stay off the strip at the Orleans.
